when it Comes to our Food Flavors
I was hungry, didn't have much to work with, and needed to something
to eat quickly before I had to jet out the door! Needless to say,
I prevailed and created this delicious dip.
Turns out the kitchen rampage wasn't so bad after all!

- 1 ½- 2 c. baby spinach, finely chopped
- ½ medium sweet potato, cooked and mashed
- 2 tbsp. original hummus
- 1 tbsp. plain Greek yogurt
- 2-3 artichoke hearts, shredded
- ¼ cup beets, finely chopped
- 1 can chunk light tuna
Directions: In a small bowl, combine sweet potato, hummus, and yogurt together. Fold in artichoke hearts and beets. In medium-large bowl, combine spinach and sweet potato blend together. Finally, fold in tuna. Grab your favorite tortilla chips or crackers. Enjoy!
